HOW TO MAKE TEA

This is OOTC’s own way of enjoying gyokuro, different from the usual way of brewing it. Gyokuro is a tea for savoring the umami stored in its leaves, a little at a time. To bring organic gyokuro closer to everyday life, we suggest pouring in cold water first, then adding boiling water on top. Changing the amounts and balance of cold and hot water little by little, and following how the taste shifts, is the true pleasure of the OOTC way. Depending on the leaves, you can enjoy around ten infusions. Umami, aroma and a faint bitterness that shift with every infusion: please enjoy a small, luxurious moment with organic gyokuro.

WHAT YOU NEED

We recommend a teapot and cups as small as possible. With a hohin, a handleless teapot made for gyokuro, and tiny cups, you can enjoy its delicate flavor even more.

HOW TO BREW

We recommend savoring it slowly, a little at a time, from a small teapot. Enjoy rich umami in the first infusion with cold water and a little boiling water; from the second on, change the balance of cold and hot water and enjoy how the aroma and flavor change.

The leaves slowly soak up the water, and less of it remains in the teapot.

Next, pour in 1 tablespoon (15ml) of boiling water, wait about 15 seconds, then pour into your cup. The leaves should be just covered.

Enjoy the rising aroma as you pour gently into your cup. Rich umami and an almost silky texture: a cup beyond words, one only gyokuro can give.

Use about 3 tablespoons (45ml) of cold and hot water in total. Change the amount of each and enjoy how the flavor shifts.

As with the first, pour in 2 tablespoons of cold water, wait a little, then add 1 tablespoon of boiling water.

Try 1 tablespoon of cold water and 2 of boiling water. Raising the temperature a little brings out changes in aroma and flavor.

Try 3 tablespoons of boiling water only. The heat draws more out of the leaves, and the tea’s natural, gentle astringency and bitterness appear alongside the umami.

Now try 3 tablespoons of cold water only. Curiously, the astringency drawn out by the hot water softens, and the umami returns.

Change the amounts of cold and hot water and the steeping time to find the taste you like.

More hot water raises the temperature and brings out the aroma, but along with the umami, astringency and bitterness come out more easily too.

More cold water lowers the temperature and makes the umami easier to taste. From the sixth infusion the flavor grows lighter, so enjoy its clean finish.

Over 20 to 30 minutes, you can slowly enjoy the changing aroma and flavor of about ten cups.

HOW UMAMI IS BORN

Tea plants grow all year round, and in spring, as their life force rises, the first flush is picked. Processing is the work of sealing the essence of the leaves’ flavor and aroma inside them: rolling it in, like placing treasure in a chest and locking it. There are two chances to open that lock. The first is the final firing in finishing. The second is the moment hot water is poured into the teapot. The water releases the umami and aroma, and the story of gyokuro begins in a single cup.
